Welcome to the Apimondia 2005 Prize Winning Cake of the:-

Rob and Beryl Andrews won a Silver Medal for their plain Honey Cake, and a Highly Recommended for their Honey Fruit Cake, against strong competition at the Apimondia 2005 Exhibition in Dublin. They have kindly put their recipes here for anyone to try.

Recipe for Plain Honey Cake:
Ingredients: 250g self-raising flour, 200g honey, 125g butter or margarine, two eggs and a pinch of salt.

Method: Mix the honey with the butter or margarine until creamy. Add the eggs one by one and mix thoroughly. Mix the salt with sieved flour and fold into the eggs/honey/butter mixture.
Bake in a 17-20cm circular tin, lined with greaseproof paper, for 1 - 1.5 hours in a hot oven at Gas Mark 4 or 180C/350F.

Recipe for Fruit Honey Cake:
Ingredients: 250g self-raising flour, 200g honey, 125g butter or margarine, 200g sultanas, two eggs and a pinch of salt.

Method: Mix the honey with the butter or margarine until creamy. Add the eggs one by one and mix thoroughly. Mix the salt with sieved flour and fold into the eggs/honey/butter mixture.
Finally add the fruit
Bake in a 17-20cm circular tin, lined with greaseproof paper, for 1 - 1.5 hours in a hot oven at Gas Mark 4 or 180C/350F.
